Century Eggs, are a Chinese food ingredient made from duck, chicken or quail eggs. Originally, it started as a preservation method.

They are also known as preserved eggs, hundred year eggs, thousand year eggs, millenium eggs and black eggs.

They’re considered a delicacy made by the preservation of duck, chicken or quail eggs with a mixture of clay, ash, salt, quicklime and rice hulls.

Century eggs are preserved like this for several weeks to several months. When the eggs are ready they have dark green creamy egg yolk with the scent of sour cream, while the egg white is a stiff dark brown jelly with no special aroma.

Century eggs can be eaten as they are. They are often put in rice congee or served with rice vinegar and fresh coriander.

The taste is mild and salty.

Some eggs have patterns near the surface of the egg white which are likened to pine branches, giving rise to one of its Chinese names, the pine patterned egg.
