Coconut milk, a tradition common in South East Asia and Asia. Traditionally made by grating the white inner flesh of mature coconuts and mixing the shredded coconut pulp with a small amount of hot water in order to suspend the fat present in the grated pulp. The grating process is done manually or by machine.

Coconut milk from Aroy-D brand is one of the best types available. It can be cooked in the authentic way where the coconut milk and fat can separate during the cooking process for example in a Thai curry where this process is vital.
As a matter of fact a coconut cannot be milked. So then what is it, precisely? Well, it’s not milk in the dairy sense, but by the same token close to its level of creaminess. Basically it’s simply shredded coconut flesh that is pureed with water then strained , creating a rich shock-white liquid.
Analogous to coconut water, which is found naturally in immature green coconuts. It’s an opaque, milky-white liquid extracted from pulp which has been grated from mature coconuts. The rich taste is due to its high oil content, most of which is saturated fat.
Milk from coconut doesn’t occur naturally like coconut water. The flesh is combined with water to make coconut milk which is about 50% water whereas coconut water is about 94% water. It contains much less fat and far fewer nutrients.
To point out, coconut cream and milk is made in similar fashion to their dairy counterparts. The flesh is first grated and soaked in hot water. The cream rises to the top and can be skimmed off. Remaining liquid is squeezed through a cheesecloth to extract the milk. By repeating this process, the milk becomes thinner.
